Zero Point Taco Salad

Ingredients:

  • For the Salad:
    • 1 pound (about 450g) lean ground turkey or chicken (99% fat-free)
    • 1 small onion, chopped
    • 1 bell pepper, chopped (any color)
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, chopped
    • 4 cups mixed salad greens or chopped Romaine lettuce
    • 1/2 cup fresh cilantro, chopped (optional)
    • 1 can black beans, rinsed and drained
    • 1 can corn, rinsed and drained
  • For the Seasoning:
    • 1 tablespoon chili powder
    • 1 teaspoon cumin
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon paprika
    • 1/4 teaspoon salt (optional)
    • 1/4 teaspoon black pepper
  • For the Dressing:
    • Juice of 1 lime
    • 1/4 cup salsa (choose a zero-point salsa)

Instructions:

  1. Cook the Meat:
    • In a large skillet, cook the ground turkey or chicken over medium heat until it’s no longer pink. Drain any excess fat if necessary.
    • Add the chopped onion and bell pepper to the skillet and cook for about 5 minutes until the vegetables are soft.
    • Add the seasoning mix (chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper) to the meat and vegetables. Stir well to combine. Cook for an additional 2-3 minutes until the spices are fragrant. Remove from heat and set aside.
  2. Assemble the Salad:
    • In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, black beans, and corn.
    • Add the cooked meat mixture on top of the salad.
  3. Dress the Salad:
    • In a small bowl, mix the lime juice and salsa together to make the dressing.
    • Drizzle the dressing over the salad and toss to combine.
  4. Serve:
    • Garnish with fresh cilantro if desired. Serve immediately.
