Zero Point Taco Salad
Ingredients:
- For the Salad:
- 1 pound (about 450g) lean ground turkey or chicken (99% fat-free)
- 1 small onion, chopped
- 1 bell pepper, chopped (any color)
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- 4 cups mixed salad greens or chopped Romaine lettuce
- 1/2 cup fresh cilantro, chopped (optional)
- 1 can black beans, rinsed and drained
- 1 can corn, rinsed and drained
- For the Seasoning:
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt (optional)
- 1/4 teaspoon black pepper
- For the Dressing:
- Juice of 1 lime
- 1/4 cup salsa (choose a zero-point salsa)
Instructions:
- Cook the Meat:
- In a large skillet, cook the ground turkey or chicken over medium heat until it’s no longer pink. Drain any excess fat if necessary.
- Add the chopped onion and bell pepper to the skillet and cook for about 5 minutes until the vegetables are soft.
- Add the seasoning mix (chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper) to the meat and vegetables. Stir well to combine. Cook for an additional 2-3 minutes until the spices are fragrant. Remove from heat and set aside.
- Assemble the Salad:
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, black beans, and corn.
- Add the cooked meat mixture on top of the salad.
- Dress the Salad:
- In a small bowl, mix the lime juice and salsa together to make the dressing.
- Drizzle the dressing over the salad and toss to combine.
- Serve:
- Garnish with fresh cilantro if desired. Serve immediately.
