Zero point cowboy caviar

Ingredients:

  • 1 can black beans (rinsed & drained)
  • 1 can corn (or 1½ cups fresh/frozen corn, thawed)
  • 1 cup diced tomatoes (or halved cherry tomatoes)
  • 1 bell pepper (any color), diced
  • ½ red onion, finely chopped
  • 1 jalapeño, finely diced (optional for heat)
  • ¼ cup chopped fresh cilantro
  • Juice of 2 limes
  • 2 tbsp apple cider vinegar or red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt & pepper to taste

🥄 Instructions:

  1. Prep everything:
    Dice all your veggies, rinse beans and corn, and toss them in a large bowl.
  2. Add flavor:
    Pour in lime juice, vinegar, and sprinkle with garlic powder, cumin, salt, and pepper.
  3. Mix & chill:
    Toss everything well to combine. Chill in the fridge for 30 minutes to let the flavors meld.
  4. Serve:
    Enjoy with veggie sticks, lettuce cups, or spooned over grilled chicken or fish.
    (Skip chips to keep it zero-point!)

💡 Tips:

  • Use no-salt-added beans and corn for more control over sodium.
  • Add diced avocado before serving if you’re okay with extra points.
  • Keeps in fridge 3–4 days — flavors get better with time!
