Zero point cowboy caviar

Ingredients:
- 1 can black beans (rinsed & drained)
- 1 can corn (or 1½ cups fresh/frozen corn, thawed)
- 1 cup diced tomatoes (or halved cherry tomatoes)
- 1 bell pepper (any color), diced
- ½ red onion, finely chopped
- 1 jalapeño, finely diced (optional for heat)
- ¼ cup chopped fresh cilantro
- Juice of 2 limes
- 2 tbsp apple cider vinegar or red wine vinegar
- 1 tsp garlic powder
- 1 tsp cumin
- Salt & pepper to taste
🥄 Instructions:
- Prep everything:
Dice all your veggies, rinse beans and corn, and toss them in a large bowl. - Add flavor:
Pour in lime juice, vinegar, and sprinkle with garlic powder, cumin, salt, and pepper. - Mix & chill:
Toss everything well to combine. Chill in the fridge for 30 minutes to let the flavors meld. - Serve:
Enjoy with veggie sticks, lettuce cups, or spooned over grilled chicken or fish.
(Skip chips to keep it zero-point!)
💡 Tips:
- Use no-salt-added beans and corn for more control over sodium.
- Add diced avocado before serving if you’re okay with extra points.
- Keeps in fridge 3–4 days — flavors get better with time!
