Zero Point Chicken salad,

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup celery, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup Greek yogurt (plain, non-fat)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • Salt and pepper to taste

Instructions:

  1. Combine Ingredients: In a large bowl, mix the cooked chicken, celery, and red onion.
  2. Make Dressing: In a small bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, and dill.
  3. Mix Together: Pour the dressing over the chicken mixture and stir until well combined.
  4. Season: Add salt and pepper to taste.
  5. Chill (Optional): For best flavor, chill in the refrigerator for at least 30 minutes before serving
