Yellow Pea Mash
Ingredients:
2 dl yellow dried peas, soaked in water for about 12 hours
Salt
1 red onion, sliced
3 garlic cloves, finely chopped
2 bay leaves
0.5 dl oil
Juice from half a lemon
Instructions:
Drain the soaked yellow dried peas.
In a pot, boil the soaked peas in salted water for 30 minutes.
In a separate pan, fry the sliced red onion until soft. Then add the finely chopped garlic cloves, bay leaves, and some salt to taste.
Add the boiled peas to the pan with the onion mixture. Fill the pan with water so that it covers the peas.
Boil the mixture for another 20 minutes.
Remove the water from the mixture and transfer the pea/onion mixture to a blender.
Add the oil and lemon juice to the blender.
Blend the mixture until it forms a smooth cream-like consistency.
Serve the yellow pea mash spread on bread or as desired.
