2 tbsp melted light butter (or light butter spread)
2 tbsp coconut oil
⅓ cup monk fruit or erythritol confectioners sweetener
¾ cup unsweetened coconut flakes
¼ cup chopped pecans
¼ cup chopped walnuts
⅓ cup Lily’s or other reduced-sugar chocolate chips
👩🍳 Instructions
Preheat oven to 350°F (176°C). Line a baking sheet with parchment.
Whisk eggs, melted butter, and coconut oil in a medium bowl.
Fold in sweetener, coconut flakes, nuts, and chocolate chips.
Chill dough for 30 minutes to firm up.
Scoop into 12 portions, place on baking sheet, and gently flatten.
Bake for 8–10 minutes, until golden.
Cool completely — they firm up as they set.
