1 lb (450g) boneless skinless chicken breast, cut into chunks
2 cups broccoli florets
1 red bell pepper, chopped
1 zucchini, sliced
1 red onion, sliced
1 cup cherry tomatoes
2 tsp olive oil (or use cooking spray for 0 points)
1 tsp garlic powder
1 tsp Italian seasoning or dried oregano
Β½ tsp paprika
Salt & pepper to taste
Juice of Β½ lemon (optional)
Fresh parsley for garnish (optional)
π₯ Instructions:
Preheat oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper or foil.
Prep the chicken and veggies: Add chicken and all chopped veggies to a large bowl.
Season: Drizzle with olive oil (or lightly spray), add garlic powder, Italian seasoning, paprika, salt, and pepper. Toss until everything is evenly coated.
Roast: Spread everything evenly on the baking sheet. Roast for 20β25 minutes, flipping halfway, until chicken is cooked through and veggies are tender and slightly golden.
Finish & serve: Squeeze fresh lemon juice over top if desired and sprinkle with chopped parsley.
