Ingredients:

  • 1 lb (450g) boneless skinless chicken breast, cut into chunks
  • 2 cups broccoli florets
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tsp olive oil (or use cooking spray for 0 points)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or dried oregano
  • Β½ tsp paprika
  • Salt & pepper to taste
  • Juice of Β½ lemon (optional)
  • Fresh parsley for garnish (optional)

  1. Preheat oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper or foil.
  2. Prep the chicken and veggies:
    Add chicken and all chopped veggies to a large bowl.
  3. Season:
    Drizzle with olive oil (or lightly spray), add garlic powder, Italian seasoning, paprika, salt, and pepper. Toss until everything is evenly coated.
  4. Roast:
    Spread everything evenly on the baking sheet.
    Roast for 20–25 minutes, flipping halfway, until chicken is cooked through and veggies are tender and slightly golden.
  5. Finish & serve:
    Squeeze fresh lemon juice over top if desired and sprinkle with chopped parsley.
