Easy 4 Ingredient Keto Crepes – Sweet or Savory

Ingredients:

4 large eggs

oz cream cheese, softened

1 tsp vanilla extract (for sweet crepes)

Pinch of salt (for savory crepes)

Instructions:

Prepare the Batter:

In a blender, combine the eggs, softened cream cheese, and vanilla extract if making sweet crepes. Add a pinch of salt if making savory crepes.

Blend the ingredients until smooth and well combined. Make sure there are no lumps of cream cheese left.

Heat the Pan:

Heat a non-stick skillet or crepe pan over medium heat. You can lightly grease it with butter or coconut oil if needed, although the non-stick surface should be sufficient.

Cook the Crepes:

Once the pan is hot, pour about 1/4 cup of the batter into the pan, swirling it around to spread it out thinly and evenly.

Cook the crepe for about 2-3 minutes on one side, or until the edges start to lift slightly and the bottom is golden brown.

Carefully flip the crepe using a spatula and cook for another 1-2 minutes on the other side, until cooked through and lightly browned.

Repeat the process with the remaining batter, stirring the batter in the blender briefly before pouring each crepe to ensure consistency.

Serve:

Once cooked, you can fill the crepes with your favorite sweet or savory fillings.

For sweet crepes, you can use whipped cream, berries, sugar-free syrup, or a sprinkle of powdered erythritol.

For savory crepes, you can fill them with scrambled eggs, cheese, avocado, bacon, spinach, or any other keto-friendly ingredients you prefer.
