WW BLUEBERRY LEMON SCONES
WW BLUEBERRY LEMON SCONES
Ingredients:
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/4 cup granulated sugar (or a sugar substitute for fewer points)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Zest of one lemon
- 3 tablespoons cold unsalted butter, cut into small pieces
- 1/2 cup unsweetened almond milk (or any milk of your choice)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the all-purpose flour, whole wheat flour, sugar, baking powder, salt, and lemon zest. Mix these dry ingredients together.
- Add the cold, cubed butter to the dry mixture. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the unsweetened almond milk, egg, and vanilla extract.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Stir until just combined.
- Gently fold in the blueberries.
- Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Be careful not to over-knead, as this can make the scones tough.
- Pat the dough into a circle about 1 inch thick. Cut the circle into 8 wedges.
- Place the scones on the prepared baking sheet, leaving some space between them.
- Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and cooked through.
