WHOLE TURKEY ROAST

NGREDIENTS
1 whole turkey defrosted and rinsed with innards removed
1 grapefruit sliced
1 orange sliced
1 lemon sliced
1 lime sliced
3 cups orange juice
1/8 cup olive oil
2 tablespoons mixed herbs

INSTRUCTIONS
Preheat the oven to 180°C
Stuff the cavity of the turkey with the grapefruit, orange, lemon and lime slices.
Rub the skin with the oil and sprinkle the herbs over the surface.
Place the turkey in a greased roasting pan and tent with foil or place in a roasting pan with a lid.
Pour the orange juice into the roasting pan.
Roast for about 45 minutes.
Roast while occasionally brushing the juices over the turkey.
Remove the foil or roasting pan lid 30 minutes before completion to let the turkey to brown.
