Weight Watchers Zucchini Clouds

Ingredients:

  • 2 medium zucchinis
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (or 1 tablespoon dried basil)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare Zucchini: Wash and trim the zucchinis. Grate them using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. Mix Ingredients: In a large bowl, combine the squeezed zucchini, eggs, Parmesan cheese, basil, garlic powder, salt, and pepper. Mix well until everything is evenly incorporated.
  4. Form Clouds: Using a spoon or cookie scoop, drop heaping spoonfuls of the mixture onto the prepared baking sheet, forming small mounds. Flatten them slightly with the back of the spoon.
  5. Bake: Bake in the preheated oven for about 20-25 minutes, or until the zucchini clouds are golden and firm.
  6. Cool and Serve: Let the zucchini clouds cool slightly before serving. Enjoy them warm or at room temperature.
