Weight Watchers Texas Roadhouse-Inspired Rolls
Ingredients:
- 1 Packet dry active yeast
- ¼ C. Warm water
- ½ C. Unsweetened almond milk (or skim milk for fewer points)
- ½ C. Low-fat buttermilk
- 2 Tbsp. Granulated sugar substitute (e.g., Stevia or Monk Fruit)
- 1 Egg or 1/4 cup unsweetened applesauce for an egg substitute
- Pinch of salt
- 3 ½ C. Whole wheat flour or a combination of whole wheat and all-purpose flour
- 2 Tbsp. Softened light butter
For the Lightened-Up Honey Cinnamon Butter:
- 4 Tbsp. Light butter (reduced-fat)
- ½ tsp. Ground cinnamon
- 2 tsp. Sugar-free honey substitute (e.g., Sukrin Gold or a similar brand)
- 1 Tbsp. Powdered erythritol or powdered stevia (for confectioners sugar substitute)
Instructions:
- Place the yeast and warm water in a bowl or container, stir once, and let it rest.
- Add the almond milk (or skim milk) and low-fat buttermilk to a microwave-safe container and heat until warmed. It’s okay if the buttermilk separates at this point; it won’t affect the recipe.
- Stir 2 tbsp. of softened light butter into the milk and buttermilk mixture until melted.
- In a mixing bowl, combine the milk mixture, yeast, granulated sugar substitute, salt, and 1 cup of whole wheat flour (or your preferred flour). Beat on high with a dough hook until well combined and smooth.
- Add the egg (or applesauce) to the bowl and beat until well incorporated.
- Slowly add the remaining flour, a little at a time, until the dough comes cleanly away from the dough hook attachment in the mixer.
- Lightly flour the dough, form it into a ball, and place it in a well-greased large mixing bowl.
- Cover and let the dough rest to rise for 1 hour.
- Place the dough onto a floured surface and roll it out until it is ½ inch thick.
- Cut the dough into 12 even rectangular shapes.
- Fold the ends of each rectangle under to form a roll shape and let them sit on a parchment or silicone mat-lined baking sheet to rise slightly for 20 minutes.
- Preheat the oven to 400 degrees.
- Bake the rolls for 12-15 minutes until lightly browned on top.
- If desired, brush the tops of the rolls with melted light butter.
- For the Lightened-Up Honey Cinnamon Butter: Combine the ingredients for the cinnamon honey butter in a bowl and mix until completely combined.
- Serve the warm rolls with the lightened-up honey cinnamon butter.
