Weight Watchers Taco Soup

This easy Taco Soup recipe is one of my favorite meals when I want something healthy, quick, and tasty. This one-pot meal can also be made in the Crock Pot or Instant Pot.

Ingredients:

  • 1 can (15 oz) diced tomatoes with chili (mild or your preferred heat level)
  • 1 can (14 oz) crushed tomatoes
  • 1 can (15 oz) white beans, undrained
  • 1 can (15 oz) black beans, undrained
  • 1 packet of taco seasoning (check for a low-sodium version for a healthier option)
  • Ranch spice to taste (from Trader Joe’s or a similar seasoning blend)

Instructions:

  1. In a large soup pot, combine the diced tomatoes with chili, crushed tomatoes, white beans (with their liquid), and black beans (with their liquid).
  2. Stir in the taco seasoning. You can adjust the amount of seasoning based on your taste preferences. Start with the whole packet and add more if needed.
  3. Add the ranch spice to taste. The amount will vary based on the specific seasoning you use, so start with a small amount and add more gradually until you achieve the desired flavor.
  4. Heat the soup over medium heat until it’s warmed through. Allow it to simmer for about 10-15 minutes to let the flavors meld.
  5. Taste the soup and adjust the seasonings if necessary. You can add more taco seasoning or ranch spice to suit your taste.
  6. Serve the Taco Soup hot.

Tip for those who are left with no points but are seriously hungry- make a batch of Taco Soup to keep in the fridge as a go to 0 point meal.
