Weight Watchers Taco Casserole Recipe

Ingredients:
- 1 pound extra-lean ground turkey or chicken
- 1 onion, finely chopped
- 1 bell pepper, diced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 packet reduced-sodium taco seasoning
- 1 can (10 ounces) diced tomatoes with green chilies, undrained
- 1 cup salsa
- 2 cups cooked brown rice
- 1 cup shredded reduced-fat cheddar cheese
- Fresh cilantro, chopped (optional for garnish)
- Fat-free Greek yogurt or light sour cream (optional for serving)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook Meat and Vegetables: In a large skillet, cook the ground turkey or chicken over medium heat until browned. Add chopped onions and bell peppers and cook until softened.
- Add Beans, Corn, and Seasoning: Stir in black beans, corn, taco seasoning, diced tomatoes with green chilies, and salsa. Mix well and let it simmer for a few minutes.
- Add Rice: Add cooked brown rice to the skillet and mix until everything is well combined.
- Assemble Casserole: Transfer the mixture to a greased casserole dish. Spread it out evenly.
- Top with Cheese: Sprinkle shredded cheddar cheese over the top of the casserole.
- Bake: Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
- Serve: Remove from the oven and let it cool slightly. Garnish with chopped cilantro if desired. Serve with a dollop of fat-free Greek yogurt or light sour cream if you like.
