Weight Watchers Taco Casserole.

Ingredients:

  • 1 lb lean ground turkey or chicken
  • 1 packet low-sodium taco seasoning
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup low-fat shredded cheese (cheddar or Mexican blend)
  • 4 large whole wheat or corn tortillas
  • 1 cup plain, non-fat Greek yogurt (for topping)
  • Fresh cilantro, chopped (optional, for garnish)
  • Sliced green onions (optional, for garnish)
  • Sliced jalapeños (optional, for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground turkey or chicken until browned. Drain any excess fat.
  3. Add the taco seasoning to the meat according to the package instructions, usually combining it with water and simmering until thickened.
  4. Stir in the salsa, black beans, and frozen corn. Cook for an additional 5-7 minutes, allowing the flavors to meld.
  5. In a greased casserole dish, layer two tortillas at the bottom. Spoon half of the meat mixture over the tortillas and sprinkle with half of the shredded cheese.
  6. Repeat the layering with the remaining tortillas, meat mixture, and cheese.
  7. Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes before slicing.
  9. Serve each portion with a dollop of Greek yogurt on top and garnish with fresh cilantro, sliced green onions, and jalapeños if desired.
