Weight Watchers Super Fluffy Homemade Muffins

Ingredients:

  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce (as a substitute for melted butter)
  • 1 cup granulated sugar substitute (e.g., erythritol, stevia)
  • 2 large eggs, room temperature

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (180°C).
  2. Prepare Muffin Pans:
    • Line a muffin tin with paper liners or lightly coat with non-stick cooking spray.
  3. Mix Dry Ingredients:
    • In a bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Mix Wet Ingredients:
    • In a separate bowl, mix together the applesauce (substitute for melted butter), sugar substitute, and eggs until well combined.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  6. Fill Muffin Cups:
    • Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  7. Bake:
    • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool:
    • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
