Weight Watchers Super Fluffy Homemade Muffins

Ingredients:
- 1 1/3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce (as a substitute for melted butter)
- 1 cup granulated sugar substitute (e.g., erythritol, stevia)
- 2 large eggs, room temperature
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (180°C).
- Prepare Muffin Pans:
- Line a muffin tin with paper liners or lightly coat with non-stick cooking spray.
- Mix Dry Ingredients:
- In a bowl, whisk together the all-purpose flour, baking powder, and salt.
- Mix Wet Ingredients:
- In a separate bowl, mix together the applesauce (substitute for melted butter), sugar substitute, and eggs until well combined.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Fill Muffin Cups:
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake:
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Cool:
