Weight Watchers Strawberry Yogurt Dessert

Ingredients:

  • 2 cups fresh strawberries, chopped
  • 1 cup non-fat Greek yogurt (or your preferred yogurt)
  • 2 tablespoons honey or sweetener of choice
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional for added zest)
  • 1/4 cup low-fat granola or crushed nuts for topping (optional)
  • Fresh mint leaves for garnish (optional)

Instructions:

  1. Prepare the Strawberries: Wash, hull, and chop the strawberries into small pieces. Set aside.
  2. Make the Yogurt Mixture: In a bowl, combine the Greek yogurt, honey (or sweetener), vanilla extract, and lemon juice (if using). Mix well until smooth and creamy.
  3. Assemble the Dessert: Layer the chopped strawberries at the bottom of serving glasses or bowls. Spoon the yogurt mixture over the strawberries, spreading evenly.
  4. Top it Off: Add a sprinkle of granola or crushed nuts for some crunch. Garnish with fresh mint leaves if desired.
  5. Chill & Serve: Refrigerate for at least 30 minutes to let the flavors meld together. Serve chilled and enjoy your creamy, fruity treat!
