Weight Watchers Strawberry Yogurt Dessert

Ingredients:
- 2 cups fresh strawberries, chopped
- 1 cup non-fat Greek yogurt (or your preferred yogurt)
- 2 tablespoons honey or sweetener of choice
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional for added zest)
- 1/4 cup low-fat granola or crushed nuts for topping (optional)
- Fresh mint leaves for garnish (optional)
Instructions:
- Prepare the Strawberries: Wash, hull, and chop the strawberries into small pieces. Set aside.
- Make the Yogurt Mixture: In a bowl, combine the Greek yogurt, honey (or sweetener), vanilla extract, and lemon juice (if using). Mix well until smooth and creamy.
- Assemble the Dessert: Layer the chopped strawberries at the bottom of serving glasses or bowls. Spoon the yogurt mixture over the strawberries, spreading evenly.
- Top it Off: Add a sprinkle of granola or crushed nuts for some crunch. Garnish with fresh mint leaves if desired.
- Chill & Serve: Refrigerate for at least 30 minutes to let the flavors meld together. Serve chilled and enjoy your creamy, fruity treat!
Tips:
- You can substitute honey with any low-calorie sweetener to reduce the sugar content.
- For a twist, add a few drops of almond extract or a sprinkle of cinnamon for extra flavor.
- If you want to make it more indulgent, top with a few chocolate shavings or a drizzle of sugar-free chocolate syrup.
