INGREDIENTS

nonstick cooking spray
½ tsp olive oil
1 cup fresh mushrooms sliced
2 tsp garlic minced
10 oz frozen spinach
½ medium onion chopped
½ cup fat-free cottage cheese
3 eggs
1 cup artichoke hearts chopped
salt to taste
black pepper to taste

INSTRUCTIONS 

  • Preheat oven to 350° F
  • Prepare a pie dish by spraying with non-stick cooking spray.
  • In a saute pan over medium/high heat, add olive oil.
  • Add mushrooms, garlic, spinach, and onions.
  • Saute until the liquid reduces.
  • Stir in cottage cheese, eggs, artichoke hearts, salt, and pepper.
  • In the prepared pie dish, add contents of saute pan.
  • In preheated oven, bake for 45 minutes.
