Weight Watchers Slow Cooker Chicken Noodle Soup recipe
Ingredients:
- 1 pound boneless, skinless chicken breasts
- 8 cups low-sodium chicken broth
- 4 carrots, peeled and sliced
- 4 celery stalks, sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 cups uncooked whole wheat egg noodles
- Fresh parsley, chopped (for garnish)
Instructions:
- Place Ingredients in Slow Cooker: Place the chicken breasts, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, salt, and pepper in the slow cooker.
- Cook on Low: Cover and cook on low for 6-7 hours or until the chicken is cooked through and the vegetables are tender.
- Shred Chicken: Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
- Add Noodles: Add the uncooked whole wheat egg noodles to the slow cooker. Cook for an additional 20-30 minutes or until the noodles are tender.
- Adjust Seasoning: Taste the soup and adjust the seasoning if necessary. Remove the bay leaf.
