Weight Watchers Mongolian Ground Beef Noodles
Weight Watchers Mongolian Ground Beef Noodles
Ingredients:
- 8 oz (about 2 cups) whole wheat spaghetti (choose a lower-point option)
- 1 lb lean ground beef (90% lean or higher)
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup hoisin sauce (check for a lower-point option)
- 1/4 cup water
- 1/4 cup brown sugar (or a sugar substitute to reduce WW points)
- 2 cloves garlic, minced
- 1/2 teaspoon grated ginger
- 2 green onions, sliced
- 1 teaspoon sesame oil
- 1/4 teaspoon crushed red pepper flakes (optional)
- Cooking spray
Instructions:
- Cook the whole wheat spaghetti according to the package instructions until al dente. Drain and set aside.
- In a large skillet, cook the lean ground beef over medium-high heat until it’s browned and cooked through. Break it up into small pieces as it cooks. Once done, remove any excess fat and set the beef aside.
- In the same skillet, add the minced garlic and grated ginger. Sauté for about 1-2 minutes until fragrant.
- In a mixing bowl, whisk together the reduced-sodium soy sauce, hoisin sauce, water, and brown sugar (or sugar substitute).
- Pour the sauce mixture into the skillet with the garlic and ginger. Stir to combine.
- Add the cooked beef back to the skillet and cook for another 2-3 minutes, allowing the sauce to thicken and coat the beef.
- Stir in the cooked whole wheat spaghetti and toss to combine with the beef and sauce. Cook for another 2-3 minutes to heat through.
- Remove the skillet from heat and add the sliced green onions, sesame oil, and crushed red pepper flakes if you want a little heat. Toss everything together.
- Serve the Mongolian Ground Beef Noodles hot.
