Weight Watchers Gluten Free Apple Crumble

Apple crumble is a great fall dessert. But traditional apple crumble isn’t good for anyone who’s gluten free and on the Weight Watchers diet. Luckily, there are a few simple ways to make it into a delicious gluten free dessert that’s also a great sweet treat on Weight Watchers.

It only has 3 points per serving on the purple plan and 5 points per serving on the green and blue plans

Ingredients

  • 2 pounds gala apples, peeled and cubed
  • 1 teaspoon ground cinnamon
  • ½ tablespoon cornstarch
  • The juice of one lemon
  • ½ cup brown sugar
  • 2 ¼ cup old fashioned oats
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/3 cup light vegetable oil spread (Country Crock), melted

Instructions

  1. Preheat oven to 350 degrees and grease a 9×13 baking dish with nonstick cooking spray.
  2. In a medium bowl, toss the apples with cinnamon and cornstarch. Measure ½ cup of brown sugar, then add one tablespoon of the sugar to the apples. Toss to coat.
  3. Pour 1 ¼ cups of old fashioned oats into a blender and blend until finely ground. Add the blended flour to a large bowl and mix with remaining oats, remaining brown sugar, baking powder, vanilla extract, and melted vegetable oil spread.
  4. Add the apples to the baking dish and top with the oat mixture.
  5. Bake in the preheated oven for 40 minutes. Allow to cool slightly before serving.
