Weight Watchers-Friendly Strawberry Banana Cheesecake Salad

Ingredients:

  • 1 pound strawberries, hulled and halved
  • 3 medium bananas, sliced
  • 8 ounces fat-free cream cheese, softened
  • 1/2 cup non-fat Greek yogurt
  • 2 tablespoons powdered sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup mini marshmallows (optional, adjust for points)
  • 1 cup fat-free whipped topping

Instructions:

  1. Prepare Fruit:
    • Wash and hull the strawberries, then cut them into halves. Slice the bananas and place them in a large mixing bowl.
  2. Prepare Cheesecake Mixture:
    • In a separate bowl, beat together softened cream cheese, Greek yogurt, powdered sugar, vanilla extract, and lemon juice until smooth.
  3. Combine Fruit and Cheesecake Mixture:
    • Add the cheesecake mixture to the bowl of fruit. Gently fold until the fruit is well coated with the mixture.
  4. Add Marshmallows (Optional):
    • If you’re using mini marshmallows, fold them into the fruit and cheesecake mixture. Adjust quantities based on your preference and Weight Watchers points.
  5. Fold in Whipped Topping:
    • Gently fold in the fat-free whipped topping until everything is well combined.
  6. Chill:
    • Cover the bowl and refrigerate for at least 1-2 hours to allow the flavors to meld.
  7. Serve:
    • Before serving, give it a gentle stir. Optionally, garnish with additional strawberries or banana slices.
