Weight Watchers-Friendly Strawberry Banana Cheesecake Salad

Ingredients:
- 1 pound strawberries, hulled and halved
- 3 medium bananas, sliced
- 8 ounces fat-free cream cheese, softened
- 1/2 cup non-fat Greek yogurt
- 2 tablespoons powdered sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup mini marshmallows (optional, adjust for points)
- 1 cup fat-free whipped topping
Instructions:
- Prepare Fruit:
- Wash and hull the strawberries, then cut them into halves. Slice the bananas and place them in a large mixing bowl.
- Prepare Cheesecake Mixture:
- In a separate bowl, beat together softened cream cheese, Greek yogurt, powdered sugar, vanilla extract, and lemon juice until smooth.
- Combine Fruit and Cheesecake Mixture:
- Add the cheesecake mixture to the bowl of fruit. Gently fold until the fruit is well coated with the mixture.
- Add Marshmallows (Optional):
- If you’re using mini marshmallows, fold them into the fruit and cheesecake mixture. Adjust quantities based on your preference and Weight Watchers points.
- Fold in Whipped Topping:
- Gently fold in the fat-free whipped topping until everything is well combined.
- Chill:
- Cover the bowl and refrigerate for at least 1-2 hours to allow the flavors to meld.
- Serve:
- Before serving, give it a gentle stir. Optionally, garnish with additional strawberries or banana slices.
