Weight Watchers-Friendly Parmesan Roasted Cauliflower

Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 1 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prepare the cauliflower by cutting it into small, bite-sized florets. Rinse and pat dry.
  3. Toss the cauliflower in a bowl with olive oil, ensuring all pieces are coated.
  4. Season the cauliflower with garlic powder, onion powder, paprika, salt, and pepper. Stir well.
  5. Roast the cauliflower on a baking sheet lined with parchment paper for 25-30 minutes, flipping halfway through, until tender and golden brown.
  6. Top with Parmesan cheese and return to the oven for an additional 5 minutes, or until the cheese is melted and slightly crispy.
  7. Garnish with freshly chopped parsley and serve warm.
