Ingredients:

  • 1 low-calorie sponge cake (store-bought or homemade, WW-friendly)
  • 1 cup non-fat Greek yogurt (or sugar-free vanilla yogurt)
  • ½ cup fresh strawberries, sliced
  • ½ cup fresh blueberries
  • 1 tbsp sugar-free maple syrup or honey (optional)
  • ½ tsp vanilla extract
  • 1 tbsp slivered almonds (for crunch)
  • Sugar-free whipped topping (optional)

Instructions:

  1. Prepare the Cake: Cut the sponge cake into small cubes. If making at home, use a sugar-free or low-calorie recipe.
  2. Mix the Yogurt: In a bowl, mix Greek yogurt with vanilla extract and a drizzle of sugar-free maple syrup or honey.
  3. Assemble the Parfait:
    • In a glass or jar, start with a layer of cake cubes.
    • Add a layer of yogurt.
    • Sprinkle some fresh berries.
    • Repeat the layers until the glass is full.
  4. Top It Off: Add a dollop of sugar-free whipped topping and sprinkle with slivered almonds.
  5. Chill & Serve: Refrigerate for 10-15 minutes before serving for the best taste.
