Ingredients:
- 1 low-calorie sponge cake (store-bought or homemade, WW-friendly)
- 1 cup non-fat Greek yogurt (or sugar-free vanilla yogurt)
- ½ cup fresh strawberries, sliced
- ½ cup fresh blueberries
- 1 tbsp sugar-free maple syrup or honey (optional)
- ½ tsp vanilla extract
- 1 tbsp slivered almonds (for crunch)
- Sugar-free whipped topping (optional)
Instructions:
- Prepare the Cake: Cut the sponge cake into small cubes. If making at home, use a sugar-free or low-calorie recipe.
- Mix the Yogurt: In a bowl, mix Greek yogurt with vanilla extract and a drizzle of sugar-free maple syrup or honey.
- Assemble the Parfait:
- In a glass or jar, start with a layer of cake cubes.
- Add a layer of yogurt.
- Sprinkle some fresh berries.
- Repeat the layers until the glass is full.
- Top It Off: Add a dollop of sugar-free whipped topping and sprinkle with slivered almonds.
- Chill & Serve: Refrigerate for 10-15 minutes before serving for the best taste.
