Ingredients:
- 1 large eggplant, cut into 1/2-inch thick rounds
- Cooking spray
- Salt and black pepper, to taste
- 1/2 cup marinara sauce (low-sugar)
- 1 cup part-skim mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Place the eggplant rounds on a baking sheet lined with parchment paper. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
- Pat the eggplant rounds dry with paper towels. Place them back on the baking sheet and spray with cooking spray.
- Bake the eggplant rounds in the preheated oven for about 15-20 minutes or until they are tender and slightly browned.
- Remove the baking sheet from the oven and spread marinara sauce on each eggplant round.
- Sprinkle with shredded mozzarella cheese and grated Parmesan cheese. Sprinkle dried oregano on top.
- Return the baking sheet to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves if desired.
- Serve the eggplant pizzas hot and enjoy!
