Weight Watchers Eggplant Pizza

Ingredients:

  • 1 large eggplant, cut into 1/2-inch thick rounds
  • Cooking spray
  • Salt and black pepper, to taste
  • 1/2 cup marinara sauce (low-sugar)
  • 1 cup part-skim mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Place the eggplant rounds on a baking sheet lined with parchment paper. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
  3. Pat the eggplant rounds dry with paper towels. Place them back on the baking sheet and spray with cooking spray.
  4. Bake the eggplant rounds in the preheated oven for about 15-20 minutes or until they are tender and slightly browned.
  5. Remove the baking sheet from the oven and spread marinara sauce on each eggplant round.
  6. Sprinkle with shredded mozzarella cheese and grated Parmesan cheese. Sprinkle dried oregano on top.
  7. Return the baking sheet to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  8. Garnish with fresh basil leaves if desired.
  9. Serve the eggplant pizzas hot and enjoy!
