Weight Watchers Cucumber Salad

This cucumber salad is a cool, crunchy, and tangy dish that complements just about any meal. The fresh cucumbers are sliced thin and tossed in a light vinaigrette made with vinegar, seasonings, and just a hint of sweetness. Ingredients

  • 2 large cucumbers, thinly sliced (English cucumbers or peeled regular cucumbers)
  • 1/4 cup red onion, thinly sliced

  • 1 tablespoon water
  • 1 teaspoon sugar or sugar substitute (like stevia or monk fruit)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Instructions

1. Prepare the vegetables.
Wash and slice the cucumbers thinly using a sharp knife or a mandoline for even cuts. If using regular cucumbers, peel them to avoid bitterness and remove seeds if desired. Slice the red onion into very thin strips for a milder flavor that blends well into the salad.

2. Mix the dressing.
In a small bowl or jar, whisk together the vinegar, water, sugar or sugar substitute, salt, pepper, and garlic powder (if using). Stir until the sugar dissolves completely. This dressing is light and tangy with just enough sweetness to balance the acidity.

3. Combine the ingredients.
Place the sliced cucumbers and onions in a large mixing bowl. Pour the dressing over the top and toss everything together until the cucumbers and onions are well coated. Add the dill and toss again to evenly distribute the herbs.

4. Chill and marinate.
Cover the bowl and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and the cucumbers to absorb the vinaigrette. For best results, let it sit for a few hours or overnight.

5. Serve cold.
