Ingredients:

  • 1 lb cooked shrimp, peeled and deveined
  • 1 large cucumber, thinly sliced
  • 1/2 cup plain Greek yogurt (non-fat for a lighter option)
  • 2 tbsp light mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste
  • 1 tbsp capers (optional for added flavor)
  • Fresh parsley, for garnish

Instructions:

  1. Prepare the Shrimp: If not already done, cook the shrimp by boiling or sautéing them in a bit of olive oil, salt, and pepper until pink and tender. Let them cool and chop them into bite-sized pieces.
  2. Slice the Cucumber: Wash and slice the cucumber into thin rounds. You can also use a spiralizer if you prefer spiral-cut cucumbers for a different texture.
  3. Make the Dressing: In a medium bowl, whisk together the Greek yogurt, light mayonnaise, lemon juice, garlic powder, onion powder, and chopped dill. Add salt and pepper to taste.
  4. Combine the Ingredients: In a large bowl, combine the shrimp, cucumber slices, and capers (if using). Pour the creamy dressing over the mixture and toss everything gently until well-coated.
  5. Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Garnish: Before serving, sprinkle fresh parsley on top for a burst of color and extra flavor.
