Weight Watchers Crack Green Beans

Ingredients:

  • 1 lb fresh green beans, washed and trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (whole wheat, if available)
  • Salt and pepper to taste
  • Optional: Red pepper flakes for some heat

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the green beans with olive oil until evenly coated.
  3. Spread the green beans on the prepared baking sheet in a single layer.
  4. In a small bowl, mix together the minced garlic, grated Parmesan cheese, breadcrumbs, salt, and pepper.
  5. Sprinkle the breadcrumb mixture over the green beans.
  6. If desired, add red pepper flakes for a bit of heat.
  7. Bake in the preheated oven for about 15-20 minutes or until the green beans are tender-crisp, and the breadcrumb mixture is golden brown.
  8. Remove from the oven and transfer to a serving dish.
