Weight Watchers Coconut Pudding Dessert Recipe

Ingredients:

  • 1 can (13.5 oz) coconut milk (light or full-fat, depending on preference)
  • 1 packet sugar-free vanilla pudding mix
  • 2 cups unsweetened almond milk (or any low-calorie milk of choice)
  • 1 tsp vanilla extract
  • 1 tbsp shredded unsweetened coconut (optional, for garnish)
  • Sweetener of choice (stevia, monk fruit, etc.) to taste

Instructions:

  1. Prepare Pudding Mix:
    • In a medium saucepan, combine the coconut milk, almond milk, and sugar-free vanilla pudding mix.
    • Stir well to dissolve the pudding mix into the liquids.
  2. Cook the Mixture:
    • Over medium heat, cook the mixture, stirring constantly to avoid lumps. Keep stirring until the pudding thickens (around 5-7 minutes).
  3. Sweeten:
    • Once thickened, remove from heat and add vanilla extract. Adjust sweetness by adding your preferred sweetener, stirring to combine.
  4. Chill the Pudding:
    • Pour the pudding into serving dishes or bowls.
    • Let it cool to room temperature, then refrigerate for at least 2-3 hours or until set.
  5. Serve and Garnish:
    • Before serving, top with shredded unsweetened coconut for added texture and flavor.

Serving Suggestions:

  • Garnish with a few fresh berries or a sprinkle of cinnamon for extra flair.
