Weight Watchers Coconut Pudding Dessert Recipe

Ingredients:
- 1 can (13.5 oz) coconut milk (light or full-fat, depending on preference)
- 1 packet sugar-free vanilla pudding mix
- 2 cups unsweetened almond milk (or any low-calorie milk of choice)
- 1 tsp vanilla extract
- 1 tbsp shredded unsweetened coconut (optional, for garnish)
- Sweetener of choice (stevia, monk fruit, etc.) to taste
Instructions:
- Prepare Pudding Mix:
- In a medium saucepan, combine the coconut milk, almond milk, and sugar-free vanilla pudding mix.
- Stir well to dissolve the pudding mix into the liquids.
- Cook the Mixture:
- Over medium heat, cook the mixture, stirring constantly to avoid lumps. Keep stirring until the pudding thickens (around 5-7 minutes).
- Sweeten:
- Once thickened, remove from heat and add vanilla extract. Adjust sweetness by adding your preferred sweetener, stirring to combine.
- Chill the Pudding:
- Pour the pudding into serving dishes or bowls.
- Let it cool to room temperature, then refrigerate for at least 2-3 hours or until set.
- Serve and Garnish:
- Before serving, top with shredded unsweetened coconut for added texture and flavor.
