Weight Watchers Classic Meatloaf Meatballs

Ingredients:
- 1 pound lean ground beef (at least 93% lean)
- 1/2 cup breadcrumbs (whole wheat for extra fiber)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 1/4 cup grated carrot
- 1/4 cup skim milk
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
For the Sauce:
- 1/2 cup reduced-sugar ketchup
- 2 tablespoons Dijon mustard
- 1 tablespoon honey or maple syrup
Instructions:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, chopped bell pepper, grated carrot, skim milk, egg, minced garlic, Worcestershire sauce, dried thyme, dried oregano, salt, and pepper. Mix until well combined.
- Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
- In a small bowl, mix together the ketchup, Dijon mustard, and honey or maple syrup to create the sauce.
- Brush each meatball with a small amount of the sauce.
- Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through.
- Serve the meatballs with the remaining sauce for dipping.
