Weight Watchers Chocolate Cake with Whipped Cheesecake Topping

Ingredients:

For the Chocolate Cake:

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar (or a sugar substitute to reduce WW points)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain non-fat Greek yogurt
  • 2 large eggs
  • 1 tsp vanilla extract

For the Whipped Cheesecake Topping:

  • 4 oz (about 1/2 cup) reduced-fat cream cheese
  • 1/2 cup fat-free Greek yogurt
  • 1/4 cup powdered sugar (or a sugar substitute to reduce WW points)
  • 1 tsp vanilla extract

Instructions:

For the Chocolate Cake:

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch (20×20 cm) square baking pan or line it with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, granulated sugar (or sugar substitute), baking powder, baking soda, and salt.
  3. In another bowl, combine the applesauce, Greek yogurt, eggs, and vanilla extract. Mix until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared baking pan and spread it out evenly.
  6. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool.

For the Whipped Cheesecake Topping:

  1. In a mixing bowl, combine the reduced-fat cream cheese, fat-free Greek yogurt, powdered sugar (or sugar substitute), and vanilla extract.
  2. Using an electric mixer, beat the mixture until it’s smooth and fluffy.

Assemble the Cake:

  1. Once the chocolate cake has cooled, spread the whipped cheesecake topping evenly over the cake.

WW Points (per Serving):
