Weight Watchers Chocolate Cake with Whipped Cheesecake Topping
Ingredients:
For the Chocolate Cake:
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup granulated sugar (or a sugar substitute to reduce WW points)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/2 cup plain non-fat Greek yogurt
- 2 large eggs
- 1 tsp vanilla extract
For the Whipped Cheesecake Topping:
- 4 oz (about 1/2 cup) reduced-fat cream cheese
- 1/2 cup fat-free Greek yogurt
- 1/4 cup powdered sugar (or a sugar substitute to reduce WW points)
- 1 tsp vanilla extract
Instructions:
For the Chocolate Cake:
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch (20×20 cm) square baking pan or line it with parchment paper.
- In a mixing bowl, whisk together the flour, cocoa powder, granulated sugar (or sugar substitute), baking powder, baking soda, and salt.
- In another bowl, combine the applesauce, Greek yogurt, eggs, and vanilla extract. Mix until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool.
For the Whipped Cheesecake Topping:
- In a mixing bowl, combine the reduced-fat cream cheese, fat-free Greek yogurt, powdered sugar (or sugar substitute), and vanilla extract.
- Using an electric mixer, beat the mixture until it’s smooth and fluffy.
Assemble the Cake:
- Once the chocolate cake has cooled, spread the whipped cheesecake topping evenly over the cake.
