Weight Watchers Chili

Ingredients:

  • 1 lb lean ground turkey or chicken (or lean beef)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (optional)
  • 1 can (15 oz) diced tomatoes (no salt added)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 1 cup low-sodium chicken broth or water
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 tsp cayenne pepper (optional for heat)
  • 1 tbsp olive oil or cooking spray (for sautéing)
  • Optional toppings: reduced-fat sour cream, shredded cheese, or cilantro
