Weight Watchers Chicken Salad on Croissants

Ingredients:
- 2 cups cooked chicken breast, shredded or chopped
- 1/4 cup light mayo (or Greek yogurt for fewer points)
- 1/4 cup non-fat plain Greek yogurt
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Salt to taste
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped (optional)
- 1 tbsp fresh parsley or dill (optional)
- 1/4 cup red grapes or apple, chopped (optional, for sweetness)
- 6 small light croissants (or use 100-calorie sandwich thins for fewer points)

- In a large bowl, mix together the light mayo, Greek yogurt, Dijon mustard, garlic powder, salt, and pepper.
- Add in the chicken, celery, onion, herbs, and grapes or apples if using.
- Stir well until everything is nicely coated.
- Chill in the fridge for 30 minutes for best flavor.
- Slice croissants and fill with a generous scoop of the chicken salad.
- Serve cold with a side salad or fruit!
