Weight Watchers Chicken Salad on Croissants

Ingredients:

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/4 cup light mayo (or Greek yogurt for fewer points)
  • 1/4 cup non-fat plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • Salt to taste
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped (optional)
  • 1 tbsp fresh parsley or dill (optional)
  • 1/4 cup red grapes or apple, chopped (optional, for sweetness)
  • 6 small light croissants (or use 100-calorie sandwich thins for fewer points)

👩‍🍳 Instructions:

  1. In a large bowl, mix together the light mayo, Greek yogurt, Dijon mustard, garlic powder, salt, and pepper.
  2. Add in the chicken, celery, onion, herbs, and grapes or apples if using.
  3. Stir well until everything is nicely coated.
  4. Chill in the fridge for 30 minutes for best flavor.
  5. Slice croissants and fill with a generous scoop of the chicken salad.
  6. Serve cold with a side salad or fruit!

  • Use all Greek yogurt instead of mayo.
  • Skip the croissant and serve in lettuce wraps or on whole grain toast.
