Weight Watchers Chicken Alfredo with Broccoli

Chicken Alfredo, but with broccoli instead of pasta. Heck yeah! Delish!

Ingredients:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 cups fresh broccoli florets
  • 2 cloves garlic, minced
  • 1 cup fat-free chicken broth
  • 1 cup fat-free half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until they are no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  2. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  3. Add the fresh broccoli florets to the skillet and sauté for about 3-4 minutes, or until they begin to soften.
  4. Pour in the fat-free chicken broth and bring it to a simmer. Reduce the heat and let it cook for another 3-4 minutes or until the broccoli is tender.
  5. Stir in the fat-free half-and-half, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Cook for an additional 2-3 minutes, stirring until the sauce thickens and the cheese is fully melted.
  6. Return the cooked chicken to the skillet and cook for another 2-3 minutes, allowing the chicken to heat through.
  7. Garnish with fresh parsley, if desired.

  • The points can vary based on ingredients and portion sizes, but it’s approximately 6 WW points per serving when divided into 4 servings.
