Weight Watchers Cheesy Taco Soup

Ingredients:
1 lb lean ground turkey or lean ground beef
1 packet taco seasoning (low-sodium if available)
1 cup salsa (choose a lower sugar option)
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (14 oz) diced tomatoes with green chilies
1 medium onion, diced
1 bell pepper, diced
4 cups low-sodium chicken broth
1 cup reduced-fat shredded cheddar cheese
1 teaspoon olive oil
Salt and pepper to taste
Optional toppings: chopped green onions, cilantro, low-fat sour cream, lime wedges
Instructions:
Cook Ground Meat:
In a large pot, heat olive oil over medium heat.
Add diced onions and bell peppers, sauté until softened.
Add ground turkey or beef, breaking it up with a spoon, and cook until browned.
Season and Simmer:
Sprinkle taco seasoning over the meat and vegetables. Mix well.
Add salsa, black beans, corn, diced tomatoes with green chilies, and chicken broth. Stir to combine.
Bring the soup to a simmer and let it cook for 15-20 minutes.
Add Cheese:
Stir in shredded cheddar cheese until melted and well combined.
Season to Taste:
Season with salt and pepper to taste.
Serve:
Ladle the Cheesy Taco Soup into bowls.
Top with optional toppings such as chopped green onions, cilantro, a dollop of low-fat sour cream, and lime wedges.
