Weight Watchers Buttermilk Biscuits

Ingredients:

  • 2 cups self-rising flour
  • 1/4 cup unsweetened applesauce
  • 2/3 cup non-fat buttermilk
  • 2 tablespoons cold unsalted butter, diced into small pieces
  • Cooking spray

Instructions:

  1. Preheat your oven to 425°F (220°C). Lightly grease a baking sheet with cooking spray.
  2. In a mixing bowl, combine the self-rising flour and diced cold butter. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Add the unsweetened applesauce and buttermilk to the flour mixture. Stir until just combined. Be careful not to overmix; the dough should be slightly sticky.
  4. Dust a clean surface with a little flour. Turn the dough out onto the floured surface.
  5. Gently pat the dough into a rectangle about 1/2 to 3/4 inch thick.
  6. Use a biscuit cutter or a round cookie cutter to cut out biscuits from the dough. Place the biscuits onto the prepared baking sheet, leaving a little space between each biscuit.
  7. Gather the remaining dough scraps, pat them together, and cut out more biscuits until you’ve used all the dough.
  8. Bake the biscuits in the preheated oven for 10-12 minutes or until they are golden brown on top.
  9. Once done, remove the biscuits from the oven and let them cool on a wire rack for a few minutes before serving.
