Weight Watchers Buttermilk Biscuits
Ingredients:
- 2 cups self-rising flour
- 1/4 cup unsweetened applesauce
- 2/3 cup non-fat buttermilk
- 2 tablespoons cold unsalted butter, diced into small pieces
- Cooking spray
Instructions:
- Preheat your oven to 425°F (220°C). Lightly grease a baking sheet with cooking spray.
- In a mixing bowl, combine the self-rising flour and diced cold butter. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
- Add the unsweetened applesauce and buttermilk to the flour mixture. Stir until just combined. Be careful not to overmix; the dough should be slightly sticky.
- Dust a clean surface with a little flour. Turn the dough out onto the floured surface.
- Gently pat the dough into a rectangle about 1/2 to 3/4 inch thick.
- Use a biscuit cutter or a round cookie cutter to cut out biscuits from the dough. Place the biscuits onto the prepared baking sheet, leaving a little space between each biscuit.
- Gather the remaining dough scraps, pat them together, and cut out more biscuits until you’ve used all the dough.
- Bake the biscuits in the preheated oven for 10-12 minutes or until they are golden brown on top.
- Once done, remove the biscuits from the oven and let them cool on a wire rack for a few minutes before serving.
