Ingredients:
- 1 ½ cups rolled oats
- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- 1 cup unsweetened almond milk (or skim milk)
- 1 large egg
- ¼ cup unsweetened applesauce (or mashed banana)
- 2 tbsp honey or maple syrup (optional)
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
- In a large bowl, mix oats, baking powder, cinnamon, and salt.
- In another bowl, whisk milk, egg, applesauce, sweetener, and vanilla extract.
- Combine wet and dry ingredients, then gently fold in blueberries.
- Pour into the baking dish and spread evenly.
- Bake for 30-35 minutes or until golden brown and set.
- Let it cool for a few minutes before slicing.
