Weight Watchers Amish Broccoli Salad
Ingredients:
- 4 cups fresh broccoli florets
- 1/2 cup red onion, finely chopped
- 1/2 cup reduced-fat mayonnaise
- 1/4 cup plain non-fat Greek yogurt
- 2 tablespoons apple cider vinegar
- 2 tablespoons granulated sugar (or sugar substitute)
- 1/4 cup raisins
- 4 slices turkey bacon, cooked and crumbled
- Salt and black pepper, to taste
Instructions:
- In a large mixing bowl, combine the broccoli florets and chopped red onion.
- In a separate bowl, whisk together the reduced-fat mayonnaise, Greek yogurt, apple cider vinegar, and granulated sugar until well combined.
- Pour the dressing over the broccoli and red onion. Toss until the vegetables are evenly coated.
- Add raisins and crumbled turkey bacon to the salad. Toss again to distribute the ingredients evenly.
- Season the salad with salt and black pepper to taste. Adjust the seasoning as needed.
- Cover the bowl and refrigerate the Amish Broccoli Salad for at least 30 minutes before serving.
- Once chilled, give the salad a final toss and serve.
