Weight Watchers Addictive Spinach Stuffed Pastry

🧾 Ingredients:

  • 1 cup cooked spinach (squeezed dry, chopped)
  • 1/2 cup fat-free ricotta or cottage cheese
  • 1/4 cup reduced-fat shredded mozzarella
  • 1 tbsp grated parmesan (optional for flavor)
  • 1 garlic clove (minced)
  • Salt & black pepper to taste
  • 1/2 tsp chili flakes (optional)
  • 1/2 tsp dried oregano or Italian seasoning
  • 1 sheet light puff pastry or 2-3 light tortillas (low-carb or WW-friendly)

🥣 Instructions:

  1. Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. In a bowl, mix spinach, ricotta, mozzarella, garlic, and seasonings until well combined.
  3. Roll out puff pastry (or use tortilla) and cut into squares or circles.
  4. Add 1-2 tbsp filling to the center of each piece, fold over to seal (like a pocket or turnover).
  5. Use a fork to seal edges and poke small holes on top for steam.
  6. Lightly brush with egg wash or spray with cooking spray.
  7. Bake for 15–20 minutes or until golden and crispy.
  8. Let cool slightly and serve warm with a side of light marinara or yogurt dip.

🟢 Weight Watchers Tips:

  • Using low-fat cheese and light puff pastry or even egg roll wrappers helps cut down the points.
  • You can make it in an air fryer too (about 10–12 minutes at 370°F)!
