weight watcher Sweet Potato Pie
Ingredients:
For the Pie Crust:
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 2-4 tablespoons ice water
For the Sweet Potato Filling:
- 2 cups mashed sweet potatoes (without added sugar)
- 1/2 cup non-fat plain Greek yogurt
- 1/2 cup unsweetened almond milk
- 2 large eggs
- 1/2 cup granulated sugar substitute (e.g., Stevia or monk fruit)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
Instructions:
For the Pie Crust:
- In a food processor, combine the flour and salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, pulsing until the dough comes together.
- Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
For the Sweet Potato Filling:
- In a large bowl, whisk together the mashed sweet potatoes, Greek yogurt, almond milk, eggs, sugar substitute, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Roll out the chilled pie crust on a floured surface and transfer it to a pie dish. Trim any excess crust and crimp the edges.
- Pour the sweet potato filling into the pie crust.
- Bake for 40-45 minutes or until the center is set and a toothpick inserted comes out clean.
- Allow the pie to cool completely before slicing.
