Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2-4 tablespoons ice water

For the Sweet Potato Filling:

  • 2 cups mashed sweet potatoes (without added sugar)
  • 1/2 cup non-fat plain Greek yogurt
  • 1/2 cup unsweetened almond milk
  • 2 large eggs
  • 1/2 cup granulated sugar substitute (e.g., Stevia or monk fruit)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions:

For the Pie Crust:

  1. In a food processor, combine the flour and salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, pulsing until the dough comes together.
  3. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat your oven to 375°F (190°C).

For the Sweet Potato Filling:

  1. In a large bowl, whisk together the mashed sweet potatoes, Greek yogurt, almond milk, eggs, sugar substitute, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  2. Roll out the chilled pie crust on a floured surface and transfer it to a pie dish. Trim any excess crust and crimp the edges.
  3. Pour the sweet potato filling into the pie crust.
  4. Bake for 40-45 minutes or until the center is set and a toothpick inserted comes out clean.
  5. Allow the pie to cool completely before slicing.
