Weight Watcher Oven Baked fajita

Ingredients:
1 lb boneless, skinless chicken breasts, thinly sliced
1 large onion, thinly sliced
1 large bell pepper (any color), thinly sliced
1 large bell pepper (any color), thinly sliced
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Whole wheat tortillas (optional)
Instructions:
Preheat the Oven:

Preheat your oven to 400°F (200°C).
Prepare the Vegetables:

In a large bowl, combine the sliced chicken, sliced onions, and sliced bell peppers.
Season the Fajita Mix:

Drizzle olive oil over the chicken and vegetables. Add chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Toss until the chicken and vegetables are evenly coated with the seasonings.
Bake in the Oven:

Spread the chicken and vegetable mixture evenly on a baking sheet lined with parchment paper or sprayed with cooking spray.

Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through, and the vegetables are tender. Stir halfway through the cooking time to ensure even cooking.

Serve:

Once baked, remove from the oven and garnish with fresh cilantro.

Serve the oven-baked fajitas with lime wedges. Optionally, warm whole wheat tortillas and serve the fajita mixture as a filling.

Optional Toppings:

Consider adding additional toppings such as salsa, Greek yogurt or light sour cream, shredded cheese, and sliced avocado.
