W/W Cheesecake Parfaits

Ingredients:-

  • 8 oz fat-free cream cheese, softened
  • 1/4 cup powdered sugar substitute (such as Stevia or erythritol)
  • 1 teaspoon vanilla extract
  • 1 cup fat-free Greek yogurt
  • 1 cup light whipped topping (sugar-free if available)
  • 1 cup crushed low-fat graham crackers or reduced-fat digestive biscuits
  • Fresh berries or sliced fruit for topping

Instructions:-

  1. Prepare the Cheesecake Mixture: In a mixing bowl, beat the softened fat-free cream cheese until smooth. Add powdered sugar substitute and vanilla extract, continuing to beat until well combined.
  2. Incorporate Yogurt and Whipped Topping: Gently fold in the fat-free Greek yogurt into the cream cheese mixture. Then, fold in the light whipped topping until fully incorporated.
  3. Assemble the Parfaits: Layer the crushed low-fat graham crackers or biscuits in the bottom of serving glasses or jars. Follow with a layer of the cheesecake mixture.
  4. Repeat Layers: Add another layer of the crushed crackers/biscuits on top of the cheesecake mixture, followed by another layer of the cheesecake filling.
  5. Chill and Garnish: Cover the glasses or jars and refrigerate the parfaits for at least an hour or until ready to serve. Before serving, top with fresh berries or sliced fruit…
