Veggie Stuffed Zucchini Boats
Ingredients
- 2 medium sized zucchini
- 1 to mato Roma or similar chopped
- 4 mushrooms diced
- 1 red bell pepper diced
- 1 tsp garlic powder or fresh garlic
- 1/2 tsp chili powder
- salt and pepper to taste
- 1/2 cup shredded fat free cheese
- no cooking spray
Instructions
- Wash the zucchini and sliced lengthwise down the center.
- Use a spoon to scoop out the center of the zucchini removing all the seeds.
- In a bowl combine the tomatoes, red pepper, jalapeño, seasonings and cheese.
- 4.Mix all the ingredients are tossed in the seasoning.
- Then spoon the mixture into the center of each zucchini.
- Place in the air fryer tray or basket and spray with no cooking spray.
- Cook at 385-390 for about 14 minutes.
- Makes four servings
