Weight Watchers Recipes


Quick and easy, fuss free, perfect for savory breakfast, these delicious vegetable cheese toasts are like open sandwiches filled with cheese and veggies of your choice.


  • 6 bread slices 
  • 3 tbsp butter (softened to room temperature) 
  • 1/2 cup red onion (finely chopped)
  • 1/2 cup green capsicum (finely chopped)
  • 1/2 cup tomatoes (finely chopped)
  • 1/2 cup sweet corn (boiled)
  • 1 tsp dried oregano
  • salt
  • pepper
  • 1 cup grated/ shredded cheese (I used a mix of mozzarella and cheddar) *See Note 1


  1. Preheat the oven to 180 degree celsius.
  2. To a bowl, add chopped onions, tomatoes, capsicum and corn.
  3. Add salt, pepper, oregano and mix well.
  4. Add about 1/3 cup of grated cheese to the vegetable mix. Mix well and keep aside.
  5. Spread softened butter on each bread slice and add the cheese and vegetable mix on top.
  6. Add the remaining shredded/ grated cheese evenly on the bread slices and transfer them to the oven and bake for around 15 minutes or until the cheese is melted.
  7. Serve hot.


  1. For this recipe I used a mix of cheeses: 1/2 cup mozzarella and 1/2 cheddar cheese, but for extra melty toasts, skip the cheddar and use mozzarella only.
