🍮 Vegan Tapioca Pudding

🛒 Ingredients
- ¼ cup small pearl tapioca (not instant or quick-cooking)
- 2 ½ cups unsweetened plant milk (coconut, oat, almond, or soy)
- ¼ cup maple syrup, agave, or organic cane sugar
- 1 tsp vanilla extract
- Pinch of salt
- Optional: ¼ tsp cinnamon or cardamom for warmth
- Optional topping: fruit, jam, shredded coconut, or chopped nuts
🍳 Instructions
1. Soak the Tapioca
- Rinse the tapioca pearls and soak them in ½ cup water for 30 minutes to 1 hour.
- Drain any excess water before cooking.
2. Cook the Pudding
- In a medium saucepan, combine:
- Soaked tapioca pearls
- Plant milk
- Sweetener of choice
- Salt
- Bring to a gentle boil over medium heat, stirring frequently.
- Reduce to a simmer and cook for 15–25 minutes, stirring often until the pearls are translucent and the mixture thickens.
3. Flavor It
- Once thick and the tapioca is tender, remove from heat.
- Stir in vanilla extract and any optional spices like cinnamon.
4. Cool & Serve
- Serve warm or transfer to bowls or jars and chill for at least 1 hour for a cold, pudding-like consistency.
- Top with fruit, jam, or a sprinkle of cinnamon if desired.
