Vegan Strawberry Peach Cobbler
Ingredients
- ½c vegan butter
- 1c all-purpose flour
- 2c sugar, divided
- 1tbsp baking powder
- 1tsp salt
- 1tsp vanilla extract
- 1c oat milk(any full fat type plant milk will work)
- 4c Peach & Strawberry slices(Fresh or Frozen)
- 1tbsp lemon juice
- Ground cinnamon or nutmeg
Directions - Melt butter in a 13- x 9-inch baking dish.
- Combine flour, 1 cup sugar, baking powder, & salt; add vanilla extract & milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
- Bring remaining 1 cup sugar, peach & strawberry slices, & lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle w/ cinnamon or nutmeg, if desired.
- Bake at 375°F for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.
