Vegan Spinach, Kale, and Basil Pesto

Ingredients:
2 cups fresh spinach
2 cups fresh kale (stems removed)
1 cup fresh basil leaves
1/2 cup nuts (pine nuts, walnuts, or almonds)
3-4 cloves garlic, minced
1/4 cup nutritional yeast (for a cheesy flavor)
1/2 cup extra virgin olive oil
Juice of 1 lemon
Salt and pepper to taste
Instructions:
Prepare the Greens:
Wash and roughly chop the spinach, kale, and basil.
Blend the Ingredients:
In a food processor, combine the spinach, kale, basil, nuts, garlic, and nutritional yeast.
Add the Olive Oil:
With the food processor running, slowly drizzle in the olive oil until the mixture is well combined and creamy. You may need to scrape down the sides occasionally.
Season:
Add lemon juice, salt, and pepper to taste. Blend again until smooth.
