Vegan Snickerdoodle Blondies

Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegan butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsweetened applesauce
2 teaspoons vanilla extract
1 tablespoon ground cinnamon
For topping:
1 tablespoon granulated sugar
1 tablespoon ground cinnamon
Instructions:
Preheat the oven to 350°F (180°C). Grease an 8-inch square baking dish and set aside.
In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the vegan butter with an electric mixer until creamy. Add in the granulated sugar and brown sugar, and beat until light and fluffy.
Add in the unsweetened applesauce and vanilla extract, and beat until well combined.
Slowly add in the dry ingredients to the wet ingredients, mixing until just combined.
In a small mixing bowl, mix together the tablespoon of granulated sugar and tablespoon of cinnamon for the topping.
Spread the batter into the greased baking dish and sprinkle the cinnamon-sugar mixture over the top.
Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Let cool before cutting into squares and serving
