Vegan Skinny Meatloaf

Who says you can’t indulge in comfort food without the calories and fat? This delicious Skinny Meatloaf is the perfect way to enjoy a hearty meal that’s both nutritious and satisfying. Packed with plant-based ingredients, it’s a great option for the whole family to enjoy—whether you’re following a vegan diet or simply looking for a lighter twist on a classic favorite.

Ingredients

For the Meatloaf:

  • 1 cup cooked and drained lentils
  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1 cup finely chopped mushrooms
  • 1/2 cup finely chopped onion
  • 3 cloves garlic, minced
  • 1/4 cup tomato paste
  • 2 tablespoons soy sauce
  • 1 tablespoon flaxseed meal (mix with 3 tablespoons water and let sit for 5 minutes)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Glaze:

  • 1/4 cup ketchup
  • 2 tablespoons maple syrup
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  2. Prepare the Meatloaf Mixture: In a food processor, combine the cooked lentils, rolled oats, grated carrots, mushrooms, onion, garlic, tomato paste, soy sauce, flaxseed mixture, thyme, oregano, salt, and pepper. Pulse until the ingredients are fully blended, but still retain some texture for a more satisfying bite.
  3. Shape the Meatloaf: Transfer the mixture into a bowl and shape it into a loaf. Place it on a baking sheet lined with parchment paper or a silicone mat for easy cleanup.
  4. Make the Glaze: In a small bowl, whisk together the ketchup, maple syrup, and balsamic vinegar until smooth. Brush the glaze generously over the top of the meatloaf, saving a little for serving.
  5. Bake: Place the meatloaf in the oven and bake for 40-45 minutes, or until it’s golden brown and firm to the touch.
  6. Let it Rest: Once it’s done, remove the meatloaf from the oven and let it cool for a few minutes before slicing. This helps the loaf hold its shape and makes for easier cutting.
  7. Serve: Serve the sliced meatloaf with the remaining glaze on the side. It’s a great option with a side of steamed veggies or a light salad.

Feel free to make this recipe your own! Add your favorite herbs, spices, or vegetables to personalize it. You can throw in some spinach, bell peppers, or even a handful of nuts for extra flavor and texture.

Whether you’re enjoying it on a cozy weeknight or serving it at a family gathering, this Skinny Meatloaf is a tasty and guilt-free way to enjoy a classic. Enjoy!
