Vegan Sausage Green Bean Potato Casserole:


  • 1½ lbs vegan sausage (such as plant-based kielbasa), sliced ¼” thick
  • 2 lbs baby creamer potatoes, washed, sliced in half
  • 2 15 oz cans green beans, drained
  • ⅛ cup vegetable oil
  • ¼ cup vegan butter
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 1 tsp vegan seasoning blend
  • 1 tsp garlic powder
  • 1 tsp pepper
  • ½ tsp red pepper flakes
  • ¼ cup water


  1. Preheat the oven to 400°F and spray a 9×13 baking dish with non-stick spray.
  2. Wash creamer potatoes, cut in half, and add to a sealable gallon-size bag.
  3. Add oil, vegan seasoning blend, garlic powder, pepper, and red pepper flakes to the bag. Shake to coat.
  4. In a large frying pan, add vegan sausage and water, and cook over medium-high heat until sausages have browned and most of the water has evaporated.
  5. Remove sausage from the pan. When cool enough, add it to the bag with potatoes.
  6. Melt vegan butter in the frying pan and add onions and garlic. Cook until onions are translucent. Let it cool for a few minutes and then add to the bag with other ingredients. Shake to mix.
  7. Lastly, add green beans to the bag, shake to mix, and then empty the contents into the prepared baking dish.
  8. Cover with foil and place it in the oven. Bake for 40 minutes or until potatoes are tender.
  9. Carefully remove from the oven and enjoy your Vegan Sausage Green Bean Potato Casserole!
