🥐 Vegan Biscuits
Ingredients
2 cups all-purpose flour
1 tbsp baking powder
½ tsp baking soda
1 tsp salt
6 tbsp cold vegan butter, cubed
¾ cup unsweetened plant milk
1 tsp apple cider vinegar
Instructions
Preheat oven to 425°F / 220°C. Line a baking sheet.
Mix plant milk + vinegar and set aside 5 minutes (vegan buttermilk).
Whisk flour, baking powder, baking soda, and salt.
Cut in cold vegan butter until crumbly.
Stir in buttermilk just until combined.
Pat dough to 1-inch thick, cut biscuits.
Bake 12–15 minutes until golden.
🌭 Vegan Sausage Gravy
Ingredients
1 tbsp olive oil or vegan butter
8 oz vegan sausage, crumbled
2 tbsp all-purpose flour
2 cups unsweetened plant milk (soy or oat works best)
½ tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika
½–1 tsp black pepper (don’t be shy!)
Salt, to taste
Instructions
Heat oil in a skillet over medium heat.
Brown vegan sausage until crispy and golden.
Sprinkle in flour, stir and cook 1 minute.
Slowly pour in plant milk, stirring constantly.
Add spices and simmer 5–7 minutes until thick and creamy.
Adjust seasoning to taste.
🍽 To Serve
Split warm biscuits and smother generously with sausage gravy.
Optional toppings: cracked pepper, chives, hot sauce 🌶️

No store-bought sausage? Use seasoned mushrooms or TVP
Want it extra rich? Add 1 tbsp vegan butter at the end
